82. Fat/Oil disposal

This criteria focuses on part of the waste management section. It covers the actions that have to be carried out in order to avoid cooking fat and oil being released into the sewage.

In particular this criteria focuses on the following:

  • Reasons for correct disposal of cooking / frying grease
  • Methods for collecting and separating cooking / frying grease from water used to wash cooking utensils and dishes.
  • Optional fat/oil disposals for guests.
